M2 San Mai Gyuto
This one-of-a-kind knife has a 3-layer blade with a super high-performance M2 steel core and stainless steel outer layers. M2 steel has incredible wear resistance and toughness compared to other similar steels. As far as I know, I am the only maker who is forging this combination of steels for culinary knives.
The handle is a mix of ironwood, yellow & white G10, and canvas Micarta. 212mm blade, 194g total weight.
